  • Two chopped chillies.

  • Half a teaspoon of powder.

  • 1 tablespoon of Chana Dal (Split Bengal Gram).

  • 1 tablespoon of gram, also known as urad dal.

  • Just a handful of curry leaves.

  • A pinch of asafoetida.

  • Two tablespoons of peanuts.

  • Add salt according to your preference. 

  • Garnish with coriander.

Step-by-Step Instructions

  1. Step 1: Cooking Rice

    Cook 1 cup of rice. Spread the cooked rice flat on a plate and let it cool. Using cold rice will not make it too sticky and thus easy enough to mix with spices.

  2. Step 2: Grate the Mango

    Grate the raw mango. Mamidikaya Pulihora gets an added tanginess from the raw mangoes. So, pick a firm and sour mango to make it.

  3. Step 3: Tempering

    Heat oil in a pan and add mustard seeds and cumin seeds and let them crackle. Dry red chillies and green chillies, chana dal and urad dal, curry leaves, and peanuts can be added. Fry everything till the dal turns golden brown and the peanuts become roasted.

  4. Step 4: Tempering

    Incorporate turmeric powder, asafoetida, and grated raw mango into the tempering. Then, cook the mango mixture for about 2-3 minutes, allowing the raw mango's sharpness to mellow and the fruit to soften slightly.

  5. Step 5: Mix in the Rice

    Add the cooked and cooled rice to the mango mixture. Mix everything well so that the rice is very nicely coated with the tangy mango mixture. Taste and add salt if required. Mix again, and garnish with fresh coriander leaves. Serve.
