    • Oil: Use any cooking oil like coconut, sesame, or vegetable oil.

    • Salt: To taste.

    • Asafetida (Hing): Optional, adds a distinct flavour and aids digestion.

    • Soak and Boil: Soak the peanuts in water for at least 4-6 hours or overnight. Drain the water and pressure cook the peanuts with fresh water and salt until soft but not mushy.

    • Prepare the Tempering: Heat oil in a pan. Add mustard seeds and let them splutter. Then add urad dal and fry until golden brown.

    • Add Spices: Add green chillies, curry leaves, and asafetida (if using). Sauté for a few seconds until fragrant.

    • Combine: Add the cooked peanuts and grated coconut to the pan. Mix well and cook for a minute or two, allowing the flavors to blend.

    • Serve: Serve the Peanut Sundal warm or at room temperature.
